Fall Inspired Desserts- Pumpkin Scones

Pumpkin Scones with Maple Cinnamon Glaze
Spice up your scones with a little pumpkin and fall inspired glaze.
Ingredients for Scones:
- 1 tbsp butter
- 1 cup pumpkin, cooked, mashed
- 1/2 cup sugar
- 1 egg
- 1/8 tsp salt
2 cups flour, self-rising
Ingredients for Glaze:
- 1 cup confectioners’ sugar
- 3 tablespoons pure maple syrup
- Pinch of cinnamon
- Pearled or turbinado sugar, for sprinkling
Directions for Scones:
- Oil a baking tray.
- Blend together the butter and sugar until the texture light and fluffy. Add the egg and beat well.
- Add the pumpkin, flour and salt. Fold in by hand.
- Knead lightly and cut into 1-inch squares.
- Place on the scone tray and bake at 425 degrees F. Wait until they rise and are golden brown on top. This should take about 15 minutes.
- Place on cooling rack
Directions for Glaze:
- In medium bowl stir together confectioners’ sugar, maple syrup and cinnamon
- Cover with a damp towel until you are ready to use
- Drop the top of each scone with the glaze, letting any excess glaze drip back into the bowl
- Place on cooling rack
- Sprinkle with pearled sugar and let set.
