Pumpkin Scones with Maple Cinnamon Glaze

Spice up your scones with a little pumpkin and fall inspired glaze.

Ingredients for Scones:

  • 1 tbsp butter
  • 1 cup pumpkin, cooked, mashed
  • 1/2 cup sugar
  • 1 egg
  • 1/8 tsp salt
2 cups flour, self-rising

Ingredients for Glaze:

  • 1 cup confectioners’ sugar
  • 3 tablespoons pure maple syrup
  • Pinch of cinnamon
  • Pearled or turbinado sugar, for sprinkling

Directions for Scones:

  1. Oil a baking tray.
  2. Blend together the butter and sugar until the texture light and fluffy. Add the egg and beat well.
  3. Add the pumpkin, flour and salt. Fold in by hand.
  4. Knead lightly and cut into 1-inch squares.
  5. Place on the scone tray and bake at 425 degrees F. Wait until they rise and are golden brown on top. This should take about 15 minutes.
  6. Place on cooling rack

Directions for Glaze:

  1. In medium bowl stir together confectioners’ sugar, maple syrup and cinnamon
  2. Cover with a damp towel until you are ready to use
  3. Drop the top of each scone with the glaze, letting any excess glaze drip back into the bowl
  4. Place on cooling rack
  5. Sprinkle with pearled sugar and let set.
