- 3 scrambled egg whites
- 1/4 cup light mozzarella cheese
- 1/2 cup spinach, chopped
- 1/4 cup chopped tomatoes
- 1/4 cup chopped green peppers
- 2 tablespoons salsa
- 1/4 avocado
- 1 cup roasted potatoes
- Scramble all ingredients (except potatoes) together on a skillet until cooked. Sprinkle chopped potatoes with salt, pepper, and lightly coat with EVOO. Bake at 450F in the oven for about 20 minutes.
