Ingredients
  1. 3 scrambled egg whites
  2. 1/4 cup light mozzarella cheese
  3. 1/2 cup spinach, chopped
  4. 1/4 cup chopped tomatoes
  5. 1/4 cup chopped green peppers
  6. 2 tablespoons salsa
  7. 1/4 avocado
  8. 1 cup roasted potatoes
Instructions
  1. Scramble all ingredients (except potatoes) together on a skillet until cooked. Sprinkle chopped potatoes with salt, pepper, and lightly coat with EVOO. Bake at 450F in the oven for about 20 minutes.
